Shepherd's Corn Casserole Recipe

I got this idea from the love of two dishes: Shepherd's Pie and Corn Casserole. I decided to combine them in this new twist on two classics. This is a great "comfort food." Keep in mind that I am not an expert chef, nor do I cook from scratch very often. I live in the real world with very little time for cooking and need something quick and easy.
You are free to tweak this with ingredients to make it more "homemade" or from "scratch" as you like, particularly on the potatoes. I served this with corn muffins.

Casserole Ingredients:
- 1 lb. browned and drained ground beef
- 1/2 a jar of beef gravy (I use Heinz Savory Beef, drizzle other half of jar over each serving if desired)
- 1/2 a 15 oz. can of whole kernel corn (drained)
- 1/2 a 15 oz. can of creamed corn (save the other half for corn muffins if desired)
- Half to 3/4 a row of crushed round crackers (I use Ritz)
- 1 egg (2 if you make the corn muffins)
- 2 Idahoan Baby Reds Mashed Potatoes 4.1 oz. packets
- 3 Tablespoons Butter (divided)
- 1/3 cup milk (for corn muffins)
- 1 box 8.5 oz. Jiffy Corn Muffin Mix (if desired)
- Seasoned Salt (optional)
- Parsley flakes (optional)
Step One: Brown and drain lean ground beef. Turn heat down to low. Add 1/2 jar of beef gravy. Mix well. Simmer 1 minute. Remove from heat. Set aside.
Step Two: Either microwave or boil 4 cups of water for the instant potatoes. Add the instant potatoes to boiling water as directed. Stir in 1 tablespoon butter. Set aside.
Step Three: Mix the two half cans of corn, 1 egg, and then fold in 3/4 of the crushed crackers (save 1/4 to sprinkle on top) Set aside.
Step Four: Time to add the layers to a greased casserole dish (2-3 quarts) First add the beef and gravy, next mashed potatoes (this seems like a lot, but we really love potatoes, use only one packet if desired, press down slightly firm) Sprinkle the top of potatoes lightly with seasoned salt. (optional) Add corn mixture, carefully spreading to cover entire top. Then sprinkle remaining crushed crackers on top and add 2 tablespoons of butter broke in pieces on top of the crackers crumbs. (cut into cubes) Place in preheated oven and bake uncovered for 30 minutes at 400 degrees.
Step Five: Prepare corn muffins as directed and bake along side the casserole. Carefully remove both items from oven at the end of bake time. Allow to cool 10 minutes. Sprinkle top of casserole with parsley if desired for decorative look. Remaining gravy can be lightly drizzled on each serving (if desired). This really is a quick and very delicious family meal. It is perfect for a week night dish, a family get together, or even at holidays or special occasions. Share and enjoy!
Corn Muffins:
- 1 Jiffy Corn Muffin Mix 8.5 oz. made as directed on package plus add 1/2 can of creamed corn. Be sure to allow the mix to sit at least 5 minutes before adding to greased or lined muffin tin. Fill to make 8 muffins. Bake 18-20 minutes at 400 degrees. Prepare this immediately after putting casserole in oven. It should work out to where muffins can bake with casserole the remaining time.
